| Crispy Beef Bites |
| Ingredients: 2 pounds cooked beef sirloin roast
6 tablespoons milk
1 tablespoon al-purpose flour
3 large eggs, beaten
1 1/2 cups all-purpose flour
4 teaspoons salt
1/4 teaspoon ground black pepper
3 cups vegetable oil

| Procedures: 1.Cut beef roast into 1-inch pieces.
2.In a small bowl, combine milk and 1 tablespoon flour. Stir into beaten eggs.
3.In a shallow dish or plate, mix together 1-1/2 cups flour, salt and pepper. Dip beef pieces into egg mixture and then dredge in flour mixture.
4.Fry in hot shortening until browned and heated thoroughly, about 10 minutes. Drain on paper towel.
Makes 8 servings.

| Saw Mill Beef |
| Ingredients: 4 lb To 5 pot roast
1 lg Onion
1 c Tomato; chopped
Salt and pepper

| Procedures: Put roast into a heavy skillet (with cover).
Smother meat with onion and tomatoes.
Sprinkle with salt and pepper.
Add a little water. Cover, roast 4-5 hours.
Check once in a while to see if it needs water.

| Creamed Dried Beef |
| Ingredients: 1/4 lb Dried beef
2 tb Butter
1 tb To 2 flour
1 c Milk
Hot buttered toast

| Procedures: Pick meat in small pieces, brown in butter.
Sprinkle on flour and stir. Slowly add milk;
Cook until slightly thickened. When it boils, pour it over a platter of toast and serve at once.
